A Day in The Life of Me

Currently on a diet. Well, not a diet per say, Just trying to eat healthy. I eat a lot of convenience foods, like waffles, pancakes, crisps, muffins and crumpets. My body has started screaming out for real sustenance & I have decided to oblige. This means actually bothering to cook - *sigh* - something I'm usually far too tired and or lazy to do. A ready meal or shoving some chips in the oven for 20 minutes is far easier and more convenient, then I can wallow on the sofa. If I had to cook for two, maybe this would be different, but I am vegetarian, and my fiance is not, and therefore we do not cook the same meals, thus my lazy half arsed approach to food. However I am turning over a new leaf. I went to the supermarket on Friday and bought houmous, peppers, mushrooms, broccoli, spinach, natural low fat yogurt, new potatoes, & wholegrain bread & noodles. I have since had some very tasty spinach laden sandwiches and stir fry's. I have had a lovely breakfast of sliced banana and natural yogurt this morning and have been insuring I have my daily intake of one teaspoon of bee pollen. (This will probably bee another blog entry. - Bee, see what I did there... heh...) 


Dinner this evening is going to be stir fry as last night we had a treat of Indian cuisine from the local take away. I indulged in pilau rice with saag paneer and aloo chop. I also saved some for today, it's currently sitting in the fridge tempting me. It may well be today's lunch.
The good thing about the stir fry's is that they are fast, I can whip it up in less than 30 minutes, which is ideal beings I have no patience when my tummy is growling. Same with new potatoes, I am going to put them with steamed spring greens & broccoli with a veggie Kiev. 


I'll admit, another reason for cutting down on the convenience foods, is I jumped on mum's scales last week, and I've put on a few pounds. - Only a few - but still. I have a wedding dress to fit into in 6 weeks time and I don't want to be tubby for my new hubby now do I.
